1-1/2 cups sugar
1 cup shortening
2 eggs
1 cup buttermilk
1-1/8 teaspoon salt
2 teaspoons baking powder
3-1/2 cups sifted flour
Grated rind of 2 oranges (save juice for frosting)
Mix first 7 ingredients and rind of one of the oranges together and drop by teaspoonful onto a greased cookie sheet. Bake at 350 degrees for 15 minutes or until toothpick comes out clean. When cool, add frosting.
Frosting:
Grated rind of one orange
1/8 cup to 1/4 cup of orange juice (as needed)
2 cups powdered sugar (use more if frosting is too runny to stay on cookies)
Combine all ingredients, mix well and frost cookies. Makes 3-4 dozen cookies.
