Danny Clark's Tomato and Onion Gravy

Great served with meat, biscuits or any side dish. Danny says this should serve 25 people but recently nine people polished this off by themselves!

1 cup flour
1 cup oil
1 teaspoon salt
2 teaspoons black pepper
1 medium onion, diced
2-3 quarts water
1 can Rotel original diced tomatoes

Combine flour, oil, salt and pepper in large, flat bottom pot. Heat on high, stirring constantly with spatula until flour begins to brown, 3-4 minutes. Add onions, cook until clarified (or color of gravy is reached), stirring constantly. Gently add water until desired thickness is reached. Add Rotel tomatoes. Simmer until ready to serve.
